    Necessity is the mother of invention, as they say. I think there are small things going on in all corners of the food industry, as massive as this is, but it will take a revolutionary to bring them together. Who knows who that is or what it might entail! But at the time I’m writing this, I think necessity during the pandemic has already impacted people’s thought patterns around food and eating and providing and logistics, so it will be very interesting to see what comes of it all!

    I don’t think we’ll ever see the end of food innovation until we go full “Star Trek” with makers that I can make “Tea, Earl Grey, Hot” at just a command. Until that point, there will still be room to innovate, whether it be for ease, speed, health, or sustainability.
    I thought Jamie’s comment on the Willy Wonka food pill was funny because when I see ads for products like Soylent or Huel, that is my immediate thought- full nutrition in an quick consumable form. It’s maybe not a pill or chewing gum, but that feels like the first immediate step in that direction.

      Question is… “a step in that direction” but do we ever want a food pill? Would you see that as easy and convenient and safe/reliable or a complete turn-off?

        Honestly, no, it’s not something I’d want. Easy, sure, but a lot of food products innovations make things easy and are awful in the long run. I think though that the idea of food pills went from 100% sci-fi fodder to feasible thing is when we created a processed food “nutritionally complete” substitute like that. Again, it’s not something I think we should want, but whose to say what the future of food production and sustainability will be in 50 or 100 or 200 years.

        I have used those kind of powders for two years now and and it is definitely easy and convenient, actually cheaper and faster than any fast-food, marketed as healthier (as far as I understand about nutrition it sounds right). Never tried the UK brand though.
        I have a theory that food wastes produced before the consummer (because they are ugly or out of shape…) could end up in those powders to be part of the solution. We have a new way to intake nutrients, complementary to a traditional one, perfect for when you don’t have time to enjoy your meal or want to save money for that really good quality piece of meat you want this week. Full disclosure, I am waiting for a life cycle assessment of this “new” processed food.

        My mind is not ready for pills but freeze-drying has been invented a 100 years ago, so it takes time.

    Innovation seems like something that is created in hindsight, as things tend to evolve naturally in small increments. I think something that will ‘revolutionize’ food production would be Star Trek style food replicators; The technology already exists, and there has already been some successful experiments with 3D printers creating edible items, and even things printed from seeds and spores that ‘grow’ into fungi and herbs that can be consumed. The end point of a machine that can create say, a lasagne, simply using a program with the correct balance of molecules, vitamins, minerals and thermal acceleration is something not out of the realm of possibility.

      Have you ever tried anything edible from a 3D printer? Always intrigued to see it in application rather then just consider theoretically.

    Innovation will always occur. There will always be some new way, some new device as a result of the new way which helps us survive in the food world

    It’s clear that the environment is changing and for the worse, so innovation and imagination will be our best friend to see us through these changes.

    For instance – land is drying up , fires are rife – making it hard for farmers to grow crops. Perhaps someone will invent a way where people can easily and readily ‘grow their own’ in more space efficient ways which uses much less room and less water for growth .Yeah, silly I know but we need to find a way to gain nutrients which is simple cheap and available to all. We need to take the load off farmers. Farmers could be the force and educators behind this move.
