Ham and Manchego Quesadillas

Meal plan 1 | Day four

You’ve done a lot of cooking this week so it’s time to take it easy. These take no time at all and there’s minimal prep or cooking. Good food doesn’t have to be complicated so bash these out and go put on some Ibiza chill.

Utensils
  • Coarse grater, chopping board, chefs knife, mixing bowl, frying pan, hob, heatproof spatula

Ingredients
  • 250g cheddar cheese
  • 200g thick cut ham
  • ½ bunch coriander
  • 1 red chilli
  • 8 flour tortillas
  • 3 tbsp vegetable oil
  • 100g sour cream

    Step 1 of 2

    Prepare the fillings and sandwich between tortillas

    Grate the cheese and roughly chop the ham. Finely chop the coriander. De-seed and dice the chilli. Throw all of the prepared ingredients into a mixing bowl and combine. Lay out 6 tortillas and divide your filling mix between them. Place the remaining 6 tortillas on top to sandwich the filling.

     

     

     

    Step 2 of 2

    Cook the quesadillas 

    Pour ½ tbsp of oil into a shallow frying pan and add a quesadilla. Fry until golden brown and starting to go crisp, then flip and repeat on the other side. Repeat for all 4 quesadillas, adding more oil to the pan each time if necessary.

    Serve with the sour cream.
